Enchilada Pie Supreme

Maybe I should just call this week "Favorites Week" because this is another one of my husband's favorite meals. He got excited when he came home from work to find this enchilada dish fresh out of the oven. Totally made his day! This is a another yummy recipe from my mother-in-law that's easy to make and really fills you up!
First brown the ground beef with the onion and salt. I already had cooked up some ground beef so I just threw it in the pan with the onion and salt and cooked it all together.
Until the onions are clear and soft.
Chop up the green pepper and set aside.
In a large bowl combine enchilada sauce, tomato sauce, and tomato soup.
Slice up a bunch of green onions and set aside with the green pepper.
In a sprayed 9x13 pan pour in about a cup of the red sauce mixture.
Next layer on the tortillas.
Followed by the ground beef.

Add some more sauce.
Layer the veggies (green pepper and green onions) and then cheese on top.
Layer meat, sauce, vegetables, cheese, and tortillas in layers ending with the cheese on top. Bake in the oven at 350 degrees for 30 minutes.


Enchilada Pie Supreme

1 lb. ground beef
1 tsp salt
1 medium onion diced
1 10 oz. can Old El Paso Enchilada Sauce
1 can tomato soup
1 can tomato sauce
1 pkg. large flour tortillas shells
1 large green pepper
1 bunch green onions
cheddar cheese

Dice the onion. Brown ground beef, salt, and onion in a large pan. In a medium bowl mix tomato soup, enchilada sauce, and tomato sauce together. Slice green onions and dice green pepper and set aside. In a 9x13 sprayed pan pour about 3/4-1 cup of red sauce on the bottom. Layer tortilla shell on top of sauce. Alternate meat, sauce, vegetables (green onion & green pepper), cheese, and tortilla shells in layers ending with the cheese on top. Bake at 350 degrees for 30 minutes.
