Bran Muffins

I've been on a muffin kick lately. I got this yummy recipe from my mother-in-law a long time ago and decided made these bran muffins for my hubby to take to work as a snack. These muffins make for a great snack since they are so packed full of good for you fiber and they are delicious too! It doesn't get much better than that!

Mix 2cups boiling water and baking soda together.
Set it aside to cool.
In your mixer cream shortening and sugar.
Add the eggs.
Add in your flour.
Then the salt.
Mix in your cereals.
Pour in the buttermilk and mix it well.
Add the cooled soda water and mix it all together. As you can see my Bosch is full to the brim....these make a TON of muffins!
Pour muffin mix into greased muffin tins and bake for 15 minutes.

Bran Muffins
2 cups boiling water
5 tsp. baking soda
1 cup shortening
2 cups sugar
4 eggs
5 cups flour
1 tsp. salt
4 cups All Bran Cereal
2 cups Bran Flakes
1 quart buttermilk

Mix boiling water and baking soda together. Set aside to cool. Cream together shortening and sugar. Add in the eggs. Add dry ingredients and buttermilk. Mix all together and add cooled soda water. Pour into muffin tins and bake at 375 degrees for 15 minutes.

*Mixture can be kept in the refrigerator for 6-8 weeks.
