Skinny Chicken Parmesan


I found this recipe on Pinterest a while ago and decided to make it for dinner tonight. We love good Italian food whenever we can get it around here. My husband gave this chicken parmesan a two thumbs up and said that it was definitely blog worthy!


Begin by lining a large baking sheet with foil and then lightly spraying it with cooking spray. This makes it a million times easier to to clean up I promise!
Combine the breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning in a small bowl.
Melt the butter in the microwave in a small bowl.
Brush each piece of chicken with butter and then coat the chicken in the breadcrumb/cheese mixture.
Place your chicken on the baking sheet and lightly spray with cooking spray. This will help make it nice and crispy. Pop it into the oven for 20 minutes to bake.
Remove the chicken from the oven and turn over.
Pour spaghetti sauce over each piece of chicken.
Then top it off with the mozzarella cheese and then toss it into the oven again until cheese it nice and melted.

Skinny Chicken Parmesan
Adapted from both Skinny Taste and The Girl Who Ate Everything

2 (8 oz) chicken breasts, sliced in half
3/4 cup seasoned bread crumbs
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1/4 cup grated Parmesan cheese

1 1/2-2 Tbsp butter, melted
3/4 cup reduced fat mozzarella cheese
1 cup spaghetti sauce
cooking spray

Preheat oven to 450 degrees. Line large baking sheet with foil and spray lightly with cooking spray. Combine bread crumbs, Parmesan cheese, garlic powder, and Italian seasoning in a bowl. Melt the butter in the microwave in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb/cheese mixture. Place on baking sheet and repeat with remaining pieces of chicken. Lightly spray a little more cooking spray on top and bake in the oven for 20 minutes. Remove chicken from oven and turn over. Spoon sauce over each piece and top with mozzarella cheese and bake another 5 minutes until cheese is melted. Serve over cooked spaghetti noodles.
