Oven Baked Chicken Fajitas

I found this recipe a while ago browsing Pinterest and I've been dying to try it out. Tonight I finally made it for dinner and we thought they were delicious! My husband even gave it a thumbs-up! So if you're looking for a speedy and yummy meal, this one is for you!

In a small bowl combine vegetable oil, chili powder, cumin, garlic powder, oregano, and salt. I also added a Tbsp. of water to mine.
Slice the green pepper and onions into thin strips and set aside.
Place chicken chunks in a greased baking dish. Drizzle spice mixture over the chicken and stir it until it is well coated.
Throw your onion and pepper on top of the chicken and top with tomatoes. Bake uncovered for 20-25 minutes until the chicken is cooked through and the veggies are tender.
Serve with warm tortillas and your favorite toppings (salsa, guacamole, sour cream).

1 lb. boneless, skinless chicken breasts, cut into strips or chunks
2 Tbsp. vegetable oil
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp salt
1 (15 oz) can diced tomatoes
1 medium onion, sliced
1 large bell pepper, sliced
12 flour tortillas

Preheat the oven to 400 degrees. Place chicken in greased 13 x 9 baking dish. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt. Drizzle the spice mixture over the chicken and stir to coat. Next add the tomatoes, peppers, and onions to the dish and stir to combine. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas.
