Microwave 2 bags of popcorn and then pour it all out to separate out the kernels. You don't want to have any hard kernels included in your caramel popcorn.
Then pour all of your popcorn into a large bowl and set aside.
In a large microwavable bowl put in the sugar and brown sugar.
Add in the karo syrup.
And don't forget the best part....yes it's the sweetened condensed milk. I could practically eat this stuff right out of the can.
Pour in the sweetened condensed milk goodness.
Last, add in the butter. Put it in the microwave to cook for 2 minutes.
It'll come out something like this. Stir it until it is all combined.
And looks like this. Then pop it back into the microwave to cook for another 2 minutes.
Then stir. Put back in and microwave again for 2 minutes.
It'll get all bubbly like this after the second or third time microwaving it. Put it back in to cook for the last 2 minutes. So all together it should be cooked for 8 minutes total split up into 2 minute increments.
Stir in the vanilla until it is combined.
Pour the caramel over the popcorn.
Stir until all the popcorn is well coated.
Pour the caramel popcorn onto some wax paper to cool and your done. It's that easy!

1/2 cup karo syrup
1/2 cup sweetened condensed milk
1/2 butter
2 bags of popcorn
2 tsp. vanilla
Microwave both bags of popcorn and then sort out the kernels. Pour the popcorn into a large bowl and set aside. In a large microwavable bowl add the sugar, brown sugar, karo syrup, sweetened condensed milk, and butter. Microwave for 2 minutes. Pull it out of the microwave and stir until the ingredients are well combined. Microwave again for 2 minutes and then stir. Repeat cooking for 2 minutes and stirring this until it has been in the microwave for 8 minutes total. Remove from microwave and stir. Mix in vanilla. Pour caramel over the popcorn and stir until all the popcorn is coated. Pour onto wax paper to cool.
Yummy! I have been wanting to try this recipe even though I am not supposed to eat popcorn! It is so good and very easy to make. I like that it is soft, but not super sticky.
