Oatmeal Chocolate Chip Caramel Bars


These are one of my favorite treats to make!  Not only are they a snap to make, they are also sinfully rich and delicious!  I made these little bars real quick for a family reunion the other day and they were a hit.  My Dad ended up taking a few bars with him to work the next day to share and apparently everyone raved about them.  So if you're looking for a quick dessert to make for your next BBQ or just for fun, these bars are for you!


In a medium sized bowl combine the oats, brown sugar, flour, salt and baking soda.  

 Pour the melted butter over the oatmeal mixture and stir it with a fork until it is nice and crumbly.  

 Press 1/2 of the oatmeal mixture into a greased 9x13 pan and bake it in the oven for 10 minutes.  

 Once it is out of the oven sprinkle the chocolate chips on top while it is still warm.  Let them melt slightly.  


 Pour the jar of warm caramel sauce on top of the chocolate chips.  (I have used homemade caramel sauce before and that tastes great as well.)  

 Top with remaining oatmeal mixture and bake for 25 to 30 minutes.  

Let the bars cool and then serve!  Enjoy!




Oatmeal Chocolate Chip Caramel Bars
2 cups flour
2 cups oats
1 1/2 cups brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, melted
12 ounces chocolate chips 
1 jar Caramel topping

In a bowl, combine all but the chocolate chips and caramel topping; mix with a fork until moistened and crumbly. Press half of the mixture into a greased 9 x 13-inch pan. Bake at 350 degrees for 10 minutes; remove from oven and then sprinkle chocolate chips over top and let melt slightly. Pour warm caramel topping over chocolate and then sprinkle remaining crumb mixture over top. Bake for 25 to 30 minutes more, or until golden brown and slightly bubbly around the edges. Let cool and then serve!
