Peanut Butter Bars

This recipe is for all of you peanut butter lovers out there. These are one of those desserts that just melts in your mouth. I had been craving these for the past couple of days and finally decided to give in and make up a batch. It makes a ton so I usually take a bunch around to our neighbors to share. When I dropped a plate of these to one of our neighbors he had already eaten 3 of them while I chatted with his wife. Yes these are just that scrumptious! So make some up and take a few to your friends and family!

First you start off by making the cookie layer. Cream together the butter, sugars, and eggs. See how nice and creamy it is? Then add in your vanilla and peanut butter and mix it all together.
Next add in your dry ingredients (baking soda, flour, and oats).
Mix it all up until it is well combined.
Press your cookie dough into a sprayed cookie sheet and pop it in the oven to bake for 10 minutes.
While it is baking you can work on the next layer, which is the creamy peanut butter. Put 2 cups of peanut butter in a bowl and whip it up until it looks nice and creamy smooth like this.
Spread the whipped peanut butter over the warm cookie layer and then put it into the fridge to cool.
For the chocolate frosting layer mix together the powdered sugar, cocoa, vanilla, butter, and milk.

Beat until it is nice and mixed together like this.
Spread your chocolate frosting on top and put it back into the fridge to cool again until the chocolate has set up a bit.
Peanut Butter Bars

Cookie Layer
3/4 cup butter
1/2 cup sugar
3/4 cup brown sugar
2 eggs
1 1/2 tsp. vanilla
1 cup peanut butter
3/4 tsp. baking soda
1 1/2 cup flour
1 1/4 cup rolled oats

Peanut Butter Layer
2 cup whipped peanut butter

Chocolate Frosting Layer
2 cup powdered sugar
2 Tbsp. Cocoa
1/4 cup milk
1/2 cup butter
1 tsp. vanilla

Cream together butter, sugar, brown sugar, and eggs. Mix in your vanilla and 1 cup of peanut butter until everything is well combined. The add in baking soda, flour, and rolled oats. Press into sprayed cookie sheet and then bake for 10 minutes. Next take your 2 cups of peanut butter and whip it until it is light and creamy. Spread the whipped peanut butter over your cookie layer while it is still warm. Now put your cookie sheet in the fridge to cool and set up a bit. While it is cooling you can be making up your chocolate frosting. For the chocolate frosting layer mix together your powdered sugar, cocoa, milk, butter, and vanilla until it is all combined. This is a much thinner frosting than you would have on a cake, for example. Spread your chocolate frosting over your peanut butter layer. Put in the fridge to chill for about 30 minutes or longer until it has set up. Cut into squares and serve.

Enjoy!
