Apple Muffins


Last week my fruit bowl was overflowing with apples.  My two year old likes to eat apples, but usually spits out the peel when he eats them and creates a huge mess.  Gross right!  Hopefully it's just a phase.  Anyway, I thought these muffins would be a good solution to giving him the fruit without all the mess.  Well it worked!  He absolutely loved them!  He begged for them every day until they were all gone.  I'd say they were a hit!  

 In a large bowl combine sugar, eggs, vanilla, and applesauce.  

Mix it all together.   

In a separate bowl combine all the dry ingredients together.  (Flour, salt, baking soda, and cinnamon)

 Pour the dry ingredients into the bowl with the wet ingredients and stir until it is well combined.  The batter is really thick!

 Stir in the diced apples.  


 Pour the batter into greased muffin tins or line them with muffin liners.  Put the muffins into to the oven to bake for 20-24 minutes at 350 degrees.  





Apple Muffins


2 cups sugar (I use 1 1/2 cups)
2 eggs
1 cup applesauce
1 Tablespoon vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups peeled, cored, diced apples (around 3 apples)


Preheat oven to 350 degrees.

In a large bowl mix together sugar, eggs, applesauce, and vanilla. In a separate bowl combine flour, baking soda, salt, and ground cinnamon. Add dry ingredients to creamed mixture and mix until combined. The batter will be very thick. Add the diced apples.  Fill sprayed muffin tins with muffin mixture about 3/4 of the way full. 

Bake at 350 degrees for 20-24 minutes. Makes 18 muffins.
