Banana Bread

We are big banana bread people around here. Even my two-year old thinks it's pretty fantastic. He's not a fan of just regular bread, but pull out the banana bread and he will scarf it down. I guess he knows the good stuff when he sees it. I had a bunch of old bananas laying around so I put them to good use and made up some of this delicious banana bread.
Start out by creaming the sugar and shortening together.

Add in the eggs.
Then add in your ripe bananas. Some of mine were extra ripe as you can see from the picture.

Pour in the dry ingredients.

Mix it all together until it is well combined.
Pour the mixture into two greased bread pans.
Top with oatmeal crumb mixture (optional) and bake.




Banana Bread
1 cup shortening
2 cups sugar
4 eggs
5 ripe bananas
4 cups flour
2 tsp baking soda
1 tsp salt

Topping:
1/4 cup cold butter, cut into pieces
1/2 cup flour
1/4 cup brown sugar
1/2 cup quick oats

Cream shortening and sugar together in a large bowl. Add in eggs and bananas. Add in flour, baking soda, and salt to creamed mixture. Pour into 2 greased bread pans.
Topping: Mix butter, flour, brown sugar, and quick oats until crumbly. Sprinkle the topping on top of each loaf. Bake at 300 degrees for 75 minutes. Cool 10 minutes. Place on cooling racks to cool.
